Long Beans Omelette

This omelette must be in any home cook's repertoire. This recipe is one which needs the minimum of ingredients - the 2 main ingredients are eggs and long beans. The amount of eggs and long beans need no measurements but obviously eggs have to be more than long beans, otherwise it will not be an omelette but scrambled instead.

Ingredients:
4 eggs - lightly beaten
1 cup long beans - cut into 1/4 inch lengths.
salt and pepper
4 tbsp oil

Method:
Beat eggs with salt and pepper.
Heat oil in pan and when oil is hot, add in the long beans and saute until long beans turn bright green.
Add in eggs and fry until the bottom is brown, then flip omelette and brown the other side.
Dish up and server hot.

this looks oh so familiar...
my Mom cooks the long beans in this version cos otherwise my brother would not have taken even a bite of the long beans.
tactical method of Mom's cooking i must admit.

cheers,
yan

My mom use to put frozen peas in it and always frozen vegetables for quick dishes when needed. I like it with chop up ham and pea and carrot it great for the kids.

This looks delicious! Would be great too with some minced pork and fish sauce instead of salt : )
