Skinny Mashed Potatoes

With all the rich food served for the Christmas Dinner, a skinny side dish is called for and a mashed potatoes is a must have.

Ingredients:

2 cans (14 oz. each) Swanson® Chicken Broth (3 1/2 cups)
5 large potatoes, cut into 1" pieces (about 7 1/2 cups)
Generous dash black pepper


Method:

PLACE broth and potatoes in saucepan.

Heat to a boil. Cover and cook over medium heat 10 min. or until tender.

Drain, reserving broth.

MASH potatoes with 1 1/4 cups broth and pepper.

Add additional broth, if needed, until desired consistency

Serve with gravy.

Hi Lily, l love potato and was crazy about mashed potatoes, thanks for the recipe. But how to cook the gravy?

you can make a fast one -

1 tbsp oil
1 tbsp flour
1 can of stock

heat oil and add in the flour. Stir and cook flour until it turns brown(this is called making a roux). Add in the stock and whisk until it thickens. Season with pepper and salt(taste first as certain brand of stock can be very salty)

This is almost a 'must' serve item in the gatherings, all my friends love it. Sometimes when I'm lazy to make gravy, I just simply grate some cheese instead and it's also yummy
