Butternut Squash Cuties

This is another way to use up the other half of the butternut squash that has been my fruit's companion. These cuties are so easy to make and too pretty to eat. The color of the butternut squash is so vibrant and a few speckles of black sesame seeds is a crowned glory.

1 1/4 cup steamed buttersquash(mashed)
1 cup glutinous rice flour
3/4 cup tapioca flour
2 tbsp sugar
A pinch of salt
50 - 75 ml water
Oil for brushing

1/2 cup chopped roasted peanuts
2 tbsp sugar
1 tbsp toasted sesame seeds
Toasted black sesame seeds

Mix the filling ingredients and set aside.
Mix glutinous rice flour, tapioca flour, salt and sugar together.
Knead the steamed mashed butternut squash and water into the flour mixture until it form a soft dough. (Add some water at a time. You may need more or less water depending on the moisture of butternut squash.)
Cook mixture on high in the microwave, one minute at a time, stirring after every minute until the mixture is cooked - the color should change to a bright orange and the dough feels dry.
Use rubber gloves as the dough is sticky, rub a little oil before removing a small ball of dough and flatten ball into a circle. Spoon a little filling onto circle and bring edges up to form a ball. Using the edge of a plastic spatula, push sides of ball in to form ball to look like a flower. Top with toasted black sesame seeds.

Alternatively, drop back the filled balls into the filling and swirl around to coat or shape filled balls to look like mini butternut squash

Hi Lily,

I too not sure what butter squash is until I went into Google to find out. Ha ! Stupid of me.

I saw this kuih done by a China chef. Yours is so, so simple to make. Must go to buy pumpkin and make some soon.

I learned that we have to eat the whole squash/ pumpkin with the skin & seeds too, just wash the skin well and cut them into pc before frying them. I used to fry it with dried prawns and spring onion if I have in hand.

Lily, if you want the top -- sesame seeds to look more pretty try to cut a design in a carrot or potato or any veggie or sterm ( heart, square and so on )and dip it into water then dip into the sesame seeds only then press it onto the kuih and a lovely design is formed. I just learned it when I opened the Chinese cooking from your website -- YouTube.

Since you used peanut as filling, just k po -- beware of any peanut that is rotted or not in good condition MUST Discard them, as it will case Cancer. A friend of mine loved to eat peanut butter, he took 1-2 bottles per week and after 2 years he died of Cancer at the age of 40 !

Hi Lily,

I'm back from Paris. Went to market and bought a pumpkin and I made the " pumpkin cuties". Wow, all my friends loved it and thought I spent ages to make it, Ha ! It is so simple, I used the teaspoon to fill in the filling and use the same teaspoon's handle to make the design. But I did not cook the dough, afraid it will be messy, instead make the cuties then steam them for 12 mins.

Thank you Lily, you are so great !
