Tean's Gourmet Chicken Curry

What am i going to cook for lunch especially when curry chicken is the request. Imagine the hassle if i did not have one of this instant curry mix in hand. All i needed to do is to defrost the chicken, open a can of coconut milk and then cook with a pkt of curry mix. Viola - curry is ready for lunch.

Hello Lily,

It's very nice visiting your blog. I'm looking for a Malaysian curry chicken recipe from my memory and hoping that possibly you can help me finding the recipe. In college my next door roomies were from Malaysia and one day they stir fry some chilly pepper/curry and make a big pot of yellowish curry chicken stew. The smell was just wonderful and they invited me for a taste, which I took a small piece but was too spicy to go on. For years I keep thinking about the curry chicken but have no idea how to recreate the same taste. I know I only provide little information but hopefully you'll be able to give me a direction to look. Thank you very much.

harushika,

the curry paste in the above recipe is very much like you mentioned. the color of the stew depends on paste as to whether it has more tumeric or chilly powder. you can add more coconut milk and it will tone down the spiciness.

there is another curry recipe here but it is from scratch - too complicating for a first timer but if you are game to try it, it is a very delicious stew and you can use less pepper.

Lily,

Thanks for your answer. I'll go the grocery store to see whether I can find the package you used and try to make it. You are right, for a beginner like me it's not a good idea to start from scratch at the moment. Thanks again and have a good day!

Hi.

I recently "discovered" Tean's curry paste. My mom adds a piece of lemongrass into the curry, and I find it makes the curry even more delicious!
