Kuih Dadar

I made more than enough batter for french crepes so have to transform it by adding in a few drops of pandan paste to make kuih dadar. Viola, the task was easy as i have cooked coconut filling in the freezer.

Ingredients

For the crepe:

1/2 cup of all purpose flour
2 large eggs
1 cup of milk
1 tbsp of melted butter
1 tsp sugar
pinch of salt

For the Filling:

A:
3 tbsp sugar
10 oz grated palm sugar(gula melaka)
3 tbsp water

B:
20 oz grated coconut - white only
1 tbsp cornflour mixed with 2 tbsps water

Method:

For the crepe:

Mix the flour, sugar and salt in a large bowl.

Make a 'well' in the center of the flour mixture and add eggs, melted butter and half of the milk.

With a shisk or wooden spoon, gradually stir the flour into the liquid mixture.

While stirring gradually add more milk until the consistency is that of cream.

When all milk is added, beat or whisk to remove all lumps.(sieve if you must)

Pour 1/4 cup of the crepe batter into preheated pan. Cook both sides on low heat until cooked (do not cook until brown)

Put 2 tbsp of coconut filling and roll like you would the spring roll.

For the filling:

Boil A to dissolve sugar. Add coconut, lower heat, stirring till almost dry.

Add the cornflour mixture and cook for 5 minutes.

Cool.

Serves

i think you could get frozen grated coconut from pacific ocean or any other asian grocery stores. i like to buy fresh coconut and grate them myself but for if you are using grated coconut as a filling, the frozen ones are very good

Can I use dried grated coconut? Can't find fresh or frozen grated coconut here.

yes you could used dried coconut but you might have to put in more water to cook so that the coconut can be reconstituted.

if you need to use the dried coconut as a coating like for onde onde, what you have to do is to add water to the coconut and steam for 10 minutes. add in a pinch of salt.

i'm living in london and find it difficult to get freshly grated coconut. can i use dessicated coconut cooked with water instead? also, if i need to coat steamed nien koh pieces, do i steam the dessicated coconut?

yes, soak the dessicated coconut with coconut milk and then steam. use a lesser saturated fat coconut milk.

all purpose flour is plain flour in malaysia. the flour that is selling by the kilo in the sundry shop will do.

it depends, if you are able to eat several rolls by yourself, then it is for one person

the amount of crepe created depends on the amount of batter used. Try making a batch and you will know cos i did not take note when i made them.

hi lily,
i made rhis kuih this morning. they are great. for the amount of ingredients used in this recipe, when i used a 4 oz ladle to pour the batter each time, it makes 4 crepes.

can u pls tell me why the coconut filling gets hard when it gets cold? it's like a lump of coconut sugar. i used sugar n brown sugar instead of palm sugar.

the coconut filling has been overcooked and the sugar has crystalized. Put in a little water and cook it again.

dessicated coconut is fine and since it has been dehydrated, it needs more liquid to reconstitute.
