Pumpkin Muffins







These muffins waft the most incredible aroma as they bake. This recipe makes tiny, not-too-sweet, pop-in-the-mouth mini muffins that are somewhere between a muffin and a cake in texture. The final product is a delectable little morsel that is totally luscious.






Ingredients:

1 1/2 cup all-purpose flour

1 tsp baking powder

1/4 tsp baking soda

1 cup pumpkin puree

1/3 cup oil

2 eggs

1 tsp pumpkin spices

1 tsp cinnamon powder

1 cup sugar

1/2 tsp salt




Method:

Mix the dry ingredients - flour, baking powder, baking soda, salt, pumpkin spice and cinnamon.


Mix the wet ingredients - sugar, pumpkin, oil and eggs, beat lightly.


Pour wet ingredients into dry ingredients and fold in until all the dry ingredients are well blended.


Using an ice-cream scoop, scoop batter into prepared mini muffin cups, filling each 3/4 full.


Bake in preheated oven 350 F for 17 - 20 minutes or until muffins spring back when gently pressed with fingertips.

Have an easy fudge recipe to share.
1 can frosting any flavors 1/2 cup water 3Tablespoon cornstarch 2 pkgs unflavor gelatin plus 2 Tablespoons water to soften. Cook on stove in saucepan till thicken and pour in square pan to cool and cut any sizes.

Well I don't have a double boiler so I use my steamer to melt chocolate for truffle and work great. Like your early entry from blogger about steaming turkey and after roasting it with browning glaze.

It was great and ended up with a moist turkey meat ever. I cut it up before steaming and roast it faster too.

hi aunty lily, may i know where to get pumpkin puree and pumpkin spices? Can we make them from fresh pumpkin?

pumpkin comes in a can - get the libby brand.

i make from fresh pumpkin - half the pumpkin, remove the seeds and put the halves on a baking sheet and bake at 350F until soft.

Let it cool and scrape the flesh from the skin. you might have to drain the flesh on a sieve as some pumpkins have more water.

pumpkin spice is a mixture of cinnamon, nutmeg, ginger and clove. make your own mixture with these combination

cinnamon, nutmeg and cloves can be ground but ginger is difficult, try and get powdered ginger.

hi aunty lily,
i have never baked my whole life. recently picked up the interest, and baking is sooo addictive!!

i have been visiting your blog, browsing through the recipes but never really had the courage to try them out.

after baking banana and choc chip muffins, i was somehow craving for a sweet potato muffin.

i modified your recipe(i hope u wont mind!) to replace sweet potato puree instead of pumpkin. also added 2 tbsp of fresh milk.

the result was absolutely delicious!!

Made the pumpkin muffins today, have never tried anything to do with pumpkin before, but the end result is just great. I steamed the pumpkin instead of baking, and reduced the sugar to only 4 ounces,substituted the pumpkin spices with vanilla, but added the cinnamon as per your recipe. Thanks a lot for your recipe.

Hi

Baked a Pumpkin Cake today and it turned it quite well. Recipe : 7 oz. Caster or Brown sugar, 1 cup oil, 4 eggs, 12 oz of Plain Flour, 2 Tsp Baking Powder, 2 Tsp Bicarbonate of soda, 2 Tsp cinnamon, 1 Tsp vanilla,16 oz pumpkin puree, 70 gm choc chips/or chopped raisins, 50 gm slightly roasted chopped nuts (optional) and 1 Tbsp orange rind (optional). Method : Sift the flour with the baking powder, baking soda, cinnamon, salt and set aside. Cream the eggs, oil, sugar and vanilla and orange rind till light and creamy. Fold in the sifted flour. Add in the choc chips and nuts. Bake for about 50 mins. in an oiled and floured Bundt tin. Made pumpkin puree with fresh pumpkin, wash, cut, remove seeds and membrane and steam till soft, mash and drain off excess water if any.

Just wanna let you on that this muffins were absolutely delicious. Like Cheah, I used 3/4 cup packed brown sugar instead. Easy and yummy! Thanks.
