Recipe : 7 oz. Caster or Brown sugar, 1 cup oil, 4 eggs, 12 oz of Plain Flour, 2 Tsp Baking Powder, 2 Tsp Bicarbonate of soda, 2 Tsp cinnamon, 1 Tsp vanilla,16 oz pumpkin puree, 70 gm choc chips/or chopped raisins, 50 gm slightly roasted chopped nuts (optional) and 1 Tbsp orange rind (optional). Method : Sift the flour with the baking powder, baking soda, cinnamon, salt and set aside. Cream the eggs, oil, sugar and vanilla and orange rind till light and creamy. Fold in the sifted flour. Add in the choc chips and nuts. Bake for about 50 mins. in an oiled and floured Bundt tin. I steamed the pumpkin instead of baking, and reduced the sugar to only 4 ounces,substituted the pumpkin spices with vanilla, but added the cinnamon as per your recipe.
