This was served at Alexander's Birthday Party. I have made so many kuihs and they were all so rich with coconut milk, so i decided to make this agar agar using gula melaka and condensed milk. I think i should have posted a disclaimer for the guests, that i will not be responsible for any health issues as all the food served are not healthy. Well, how often do the guests get pampered with all the kuih muihs served?
Ingredients:

The brown layer:
3 tbsp agar agar powder
1200 ml water
225 g /8 oz gula melaka
1200 ml water
225 g /8 oz gula melaka
1/2 cup sugar
The Milk Layer:
1 tbsp agar agar powder
600 ml water
1/2 cup condensed milk
Method:
Cook the milk layer by putting 600 ml water in a saucepan and turn on the heat, then whisk in agar agar.
Cook until agar agar is dissolved, then add in the condensed milk.
Pour into a cake pan to cool.
Put in the fridge to set. when it is set, remove and cut into shreds.
While the milk layer is in the fridge, cook the brown layer by boiling all the ingredients together until dissolved.
Pass through a fine sieve.
To assemble:
Put the shredded milk layer into a fancy mould, then pour in the warm brown layer.
Leave to cool before putting into the fridge to set.
When set, unmould and serve.

looking at the recipe and the step by step guidance... sound quite easy... hmmm must ask tau hua (purple girl) to make for us... she sure like it eh... and we get to eat too.. heheheh

ReplyDeleteI made the Agar Agar Batik last sunday and brought a container of it to work the next day. The agar agar "disappeared" in less than 10 minutes!
I also gave a container of the agar agar to my husband to bring to his office. His colleagues loved the agar agar. Even his boss (who rarely snacks) ate a piece and liked it.
I was concerned that the inclusion of gula melaka would make the agar agar too sweet. However, that was not the case. In fact, one of my colleagues even commented that the agar agar tastes like chin chow.

ReplyDeleteI tried out this receipe yesterday. I listen to your advice on the Red Bean and Green Tea agar agar, and make sure my agar agar is dissolved this time. But what I got in my Agar Agar Batik is:
For the milk layer, it did set but is very soft that is not managable by hand. Once I use my hand to hold it, it break apart. Is that the correct texture? Or it should be firm that will not break when hold.
For the brown layer, it did set too but when I shake the mold, it wrigglein the middle. Is that the correct textture? Or it should be firm where it will not wriggle at all?
Your receipe mentioned have to be cooled before putting it into the fridge to set. I let it cool to the point when I touch the mold, the mold is warm and not hot, then I put it into the fridge, is that correct? Or I should cool until the mold is not even feel warm anymore? How long does it usually take to cool?
So sorry for all these questions again. I really would like to make it successful with your receipe cos I love your receipe.

ReplyDeleteyour milk layer does not set - perhaps you did not cook the agar agar long enough to totally dissolve it or perhaps the brand of agar agar you used is not so potent or the brand of condensed milk is too runny. the milk layer should be firm enough to shred. If it did not set, you should have return mixture to the pot and continue to cook the mixture down.
The same reasons are for the brown layer. The reason why the assembled agar agar should be cooled cos if it is still warm or hot and we leave it in the fridge, the heat might lower your fridge temperature and damaged other food. The length of time for cooling will have to depend on the temperature of your kitchen.
