Fritters are one of the favorites for afternoon tea. The most popular of the fruits used is the banana. Cempedak fried in this way is delicious. Sweet potato and taro(yam) although not a fruit, fry very well with this batter.
Ingredients:
1/2 cup self-raising flour
1/4 cup corn flour
1 tbsp rice flour
Pinch of salt
1/2 tsp baking powder
180ml water or just enough
1½ tbsp oil
3 bananas, halved
2 large sweet potatoes, cut into slices
1/2 small taro(yam), cut into slices
Enough oil for deep-frying
Method:
Combine the various flours, salt and baking powder in a mixing bowl.
Pour in water and combine into a batter. Add in oil to mix. Rest batter for 1/2 hour.
Coat banana halves, sweet potato and taro slices in batter and deep-fry in hot oil until crispy and golden brown.
Remove and drain on baking rack and then with paper towel.

Goreng pisang Mmmm... it's my all time favorite tea time snack in Malaysia. Too bad can't find the best banana (the ones with big black seeds inside)for frying here in US. I tried to make some here using regular overripe bananas but I had problem with my batter-- the coating was kind of heavy and soggy after the bananas cooled down. Any tips for light and crispy coating? Thanks, Regina (btw your website is great, definitely will try out some other malaysian recipes!)

ReplyDeleteit is not the batter that is not right. it is the bananas, although overriped bananas are sweet but when fried, they soak up too much oil and when cooled, the batter will be soggy. try and fry with still firm ripe bananas.
